A lot of people get surprised (and sometimes worried) when their raw honey turns solid or gritty in the jar. I run a local apiary in Arizona, and I get this question all the time:

Crystallized Honey, why?

NOTE: All honeys are different, some crystalized quicker than others.

Example: Clover Honey will crystalize much fast than say Orange Blossom.

NOTE: It also has a lot to do with how long the honey has been sitting around. The older it is, the more of a chance that it will crystalize.

LASTLY: Depends on how the beekeeper stores the honey. After harvest, Honey Hive Farms / Arizona Honey stores our honeys at a proven temperature that has worked for us for many year.

👉 Why does raw honey crystallize? It’s completely natural! Real honey is made up of glucose and fructose. Over time, the glucose wants to form little sugar crystals. The ratio of nectar sources (wildflower vs. mesquite, etc.), storage temperature, and even pollen content all affect how fast honey crystallizes.

👉 Is crystallized honey bad? Not at all. In fact, crystallization is one of the best signs that your honey is raw and pure. Grocery store honey often stays liquid forever because it’s been heated and filtered (removing pollen and enzymes). When your honey crystallizes, it means it still has all those good things intact.

👉 What should you do if you prefer it liquid? Just place the jar in warm (not boiling) water and let it gently return to liquid. Never microwave it — that can destroy the natural enzymes and flavor. Some people actually love crystallized honey because it’s spreadable, almost like a natural honey butter.

As a beekeeper here in Peoria, AZ (Honey Hive Farms), I actually encourage people to taste raw honey in all its forms. Crystallization doesn’t mean spoilage — it means your honey is older and most likely has not been stored correctly.
